Type 1 hypersensitivity to tomatoes is known as a true tomato allergy. Allergens present in tomatoes include a profilin, a lipid transfer protein, a beta-fructofuranosidase and a pectin methylesterase inhibitor. When a person with type 1 tomato hypersensitivity is exposed to tomato allergen, histamines are released into the skin, respiratory, and digestive tracts leading to an allergic reaction.
